To make a delicious legume salad, you can combine some of the most hydrating fruits and vegetables with chickpeas, lentils, or even beans.

  • Cucumber: Contains 97% water. It also contains amino acids, vitamin C, calcium, phosphorus, iron, and fiber, which helps improve intestinal transit.
  • Lettuce: Contains 97% water and helps regulate intestinal transit. It also has diuretic properties and helps reduce fluid retention.
  • Tomato: Consists of 93% water along with vitamin A and C.

You can mix some white rice with smoked salmon, avocado, cucumber, and edamame. If you like, you can add julienned carrots cut with a peeler or grater. For a more oriental touch, you can add soy sauce or sesame seeds as well.
