Quick and easy whole spelled Focaccia


  • 500g Wholemeal Spelled Flour
  • 175ml of Extra Virgin Olive Oil
  • 160ml of milk at room temperature
  • 3 eggs L
  • 1 sachet of baker’s yeast
  • 10 cherry tomatoes
  • 1 sprig of fresh rosemary
  • 1 teaspoon dried rosemary
  • 1 teaspoon fine salt
  • 1 tablespoon flake salt
  • 1 teaspoon garlic powder


  • Sift the flour until all of it has passed.
  • Add the milk and, without mixing, the envelope of yeast.
  • Mix and add the oil, eggs, and fine salt.
  • Cover and let stand in a dry place for 3 hours.
  • Once the time has passed, we knead well for 10 minutes on a table with a little flour and shape it.
  • Spread a little oil on the Kuoko Baking Tray and place the dough. Cover again and let stand 1 hour more.
  • After the hour, in a bowl we put together 1 tablespoon of EVOO, 1 tablespoon of flake salt, 1 teaspoon of garlic powder and dried rosemary. Paint the dough with the mixture and dip your fingers.
  • We put in some of the holes that we have made with our fingers cherry tomato halves and add some fresh rosemary leaves on top.
  • Bake for 15 minutes at 200ºC (fan) with a glass of water in the oven. Remove the water, lower the oven to 180ºC, and bake for another 20 minutes.
